Tenta (天太) is one of the most exclusive tables in Kitashinchi - a strictly members-only, reservation-by-introduction Korean restaurant limited to a single party per day, with a waiting list said to run to around three years. The chef came to Korean cuisine after fifteen years in French kitchens, and that background shapes an omakase-style menu built on precise technique and luxurious ingredients, with the entrance handled by a members-only card at the door. Its signature is the ganjang gejang - domestic swimming crab marinated for three days in a special soy sauce, then crowned with Hokkaido uni, ikura, and a touch of gold leaf - and the founding dish, a takkhanmari (whole chicken stew) using chicken mid-wings, remains a centrepiece. The counter seats a small party of four to six, with a private room available, and the whole experience is designed around one group at a time, so it reads as a destination for a very particular kind of celebration rather than a casual drop-in.
